Dominic - Jimmy the Fish
For one large single serving you will need...
Spaghetti (pre-cooked and drained) 100 g dry pasta
1 whole ripe tomato
120gm firm fish like Gurnard (diced)
1 whole red chilli (roughly chopped and soaked in oil)
1 garlic clove (roughly chopped and soaked in oil)
Parsley (freshly chopped)
Extra virgin olive oil
Salt & Pepper
Heat a pan to medium heat. Roughly chop the tomato and toss it in the hot pan with a good splash of olive oil.
Add 1/4 cup of water to the pan to bring the tomato to a medium to runny paste. Add the cubed fish, and toss constantly in the pan.
Add the garlic and chilli in oil. Add a good pinch of parsley and season with salt and pepper.
Once fish is almost cooked, add your pre-cooked pasta and toss about to cover with sauce and fish. Add a little fish stock if needed.
Serve in a shallow bowl and finish with parsley and a good splash of olive oil.
